- Using the sushi mat, place a sheet of nori and cover with the rice (leaving a 1cm edge at the bottom)
- Arrange your cucumber strips along the middle of the rice and add a pinch of wasabi. Pick up the end of the sushi mat nearest to you, roll and cut into equal portions with a sharp, wet knife.
- Serve with pickled ginger or your favourite sushi condiments
