  1. Heat ghee in a pan and add vermicelli/ sevai and roast them for few mins.
  2. Now add 2 cups milk and cook the vermicelli till it turn soft. Continue cooking till the kheer turns thick.
  3. Now add cardamom powder and stir gently and switch off the burner.
  4. Meanwhile take chopped mangoes in a blender and add sugar. Blend to a smooth paste or purรฉe.
  5. Once the kheer cools down to room temperature add mango purรฉe and mix well.
  6. Add dry fruits. Luscious Alphonso mango vermicelli kheer is ready to serve.

Do not add the mango puree even if the payasam is slightly warm. It can be prepared with cooked rice or vermicelli/sevai. Alphonso & Banganapalli mango tastes the best for this kheer. Actually this payasam is prepared in all the states across South India in their own style. Recently I tasted this mango kheer in a hotel lunch buffet and loved its taste.
