  1. Make ready 350 g Beef slices/chunks
  2. Get 2 tbsp curry powder
  3. Take 2 bay leaves
  4. Get 160 ml coconut milk
  5. Make ready 2 cups beef stock + 1/2 cup water
  6. Prepare 2 tbsp lemon juice
  7. Make ready 1 1/2 tbsp sugar
  8. Take 3 tbsp fish sauce
  9. Take 3/4 cup unsalted roasted peanuts (chopped/crushed)
  10. Get 1 medium size onion (cut to wedges)
  11. Take 1 medium size potato (cut to chunks)

  13. Prepare 140 g green beans (equal to 1 small rice bowl)
  14. Take 2 tbsp oil

Garam masala, curry powder and fresh ginger hit all of your favorite spice notes without too much heat which is ideal when feeding little ones. You can replace the beef with chicken or even tofu and it's still taste good. We opened the door and were greeted with wonderful smells and a welcoming bright interior.   1. Heat the oil on a pan, stir in curry powder and bay leaves. Saute until its aromatic.
  2. Add in the beef and onions. Brown the beef and onion, stir for 2 mins until beef and onion thoroughly coated with spices.
  3. Add in the beef stock, coconut milk, fish sauce, sugar, lemon juice, peanuts and potatoes. Bring to boil and simmer for 10 minutes or until potatoes are tender (uncover).
  4. Add in the green beans, and capsicums, cook until veggies are tender. Taste the curry and adjust to your liking. Turn off the heat and your curry is now ready to serve. Garnish with extra peanut and fried shallot (so it looks pretty).

All meals came with rice, salad, and wonderful pickled vegetables. Wow, such a simple recipe, such wonderful flavour! I slow cooked it using some extra water as I used gravy beef.
