Blanch the carrots and turnip till just soft, drain and keep aside. Spread all the vegetables by spreading on the cloth. Combine the ginger and garlic and blend in a mixer into a smooth paste. Winter brings its own favorites and soon the local markets will be flooded with gorgeous red and black (deep purple) colored carrots.

- Wash carrot, cauliflower & shalgham. Cut into pieces, pat it dry & keep aside for few hours to dry.
- In a pan heat oil add split mustard seed, turmeric, red chilli powder, grated gur. - Once the gur starts melting add vinegar, salt & vegetables & cook for a few minutes.
- When cools transfer into clean glass jar. Keep it tightly closed for 2 days. In between keep mixing all using a dry & clean spoon. Eat it with parathas.
