Fattoush is my new favorite salad, for so many reasons. First, it's an economical way to use up any past its prime pita bread you may have lying around, long after the hummus is eaten. Secondly, it's just so delicious and fresh tasting, full of crisp vegetables, greens, and herbs dressed in a tangy vinaigrette that doesn't overwhelm. In the past my family included salads to our meat dishes because we knew the importance of vegetables but fattoush is one of few salads we actually crave.
Instructions to make Fattoush my way:
- In a large bowl, mix all the vegetables together.
- In a smaller bowl, place the crushed garlic; add oil, lemon juice, pomegranate juice, sumac and salt. Mix the sauce very well.
- Pour the sauce over the mixed vegetables, mix well and then top with the bread pieces and serve.
In fact I make a larger batch (separating the pita chips so that they don't become soggy) to use for lunch the next day. Regarding those pita chips sorry you can't replace the real thing with. One bite of this salad, which he calls "Na'ama's Fattoush," was all it took for us to fall in love. wow - this is exactly like the fattoush at my favorite lebanese restaurant in detroit. now living in new mexico i had bit of a time tracking down the sumac. i made it without and then the next day at a flea market i discovered a spice stall run by an egyptian man who was selling sumac. how fortuitous! the next day i made again WITH the sumac.
