- Get a Big Pot half pot full of water. Cold Water pop all ingredients in except the watercess High Heat for 15 mins mins Cover Lids. (you can pop in those peels and duck kidneys in if you have)
- When water is Boiling put watercress in. We place them when water is boiling to avoid bitterness from watercress. Add in more Hot Boiled Water Until Pot is 3/4 Full. Remember to leave 2 handfuls on the side for later use. Boil for another 1.45hrs Med High Heat Cover Lid.
- After a total of 2 hrs you will see there should be only half pot full from evaporation. Taste the soup, add in little salt if needed. Now add in the rest of watercress in and cook for another 15mins. Served hot. Done!
