- Make ready 1 cup mince onion

- Take 2 oz black or white truffle

Our Truffle Parmesan Risotto is an elegant blend of tender Arborio rice, robust black truffles, savory Parmesan cheese and a medley of aromatic herbs, spices and mushrooms, perfect for creating rich, creamy risotto with layers of bold flavor. Melt butter in heavy large saucepan over medium heat. Add leek, fennel, onion, and garlic.
Instructions to make Truffle and Parmesan Risotto:
- Heat olive oil in medium heat
- Add garlic and onion and sweat for 3 minutes
- Add rice and lightly toast in oil for 2 minutes, stiring frequently
- Add chicken stock 1/3 rd at the time, stiring until each additional 1/3 rd absorbed.
- Once all the liquid absorbed remove from heat and stir in parmesan and butter
- Divide into 6 serving and top with shaved truffle
- Enjoy
Season to taste with salt and pepper. Spoon the risotto in the center of each shallow bowl. Garnish with the croutons and shaved truffles.
